I think it gets let up the heat today in Japan, but still humid. Nowadays, I’m craving something chilled dessert at convenient stores for my dessert after lunch. Yes, mostly ice cream. So I’m going to share easy and healthy ice cream recipe for people like me. Banana and peanut butter infused rich taste into the tofu based chocolate ice cream. If you have a bite a spoon of the ice cream, you won’t be able to stop eating!
This is 5 ingredients dairy free tofu churros recipe. You will not tire your hand whisking thick dough in a pan over heat as traditionally way to make. Only you need is combine all ingredients in a bowl and fry them into a frying pan with a little oil.
It’s officially summer now in Japan! Time flew. I can’t believe that the rainy season passed. The rainy days in this year were much shorter than usual! Nowadays it’s getting hard to spend days because the summer in Japan is super humid and hot! But my children always wish to play outside, regardless of the weather. On the other hands, it’s pleasant to spend indoors with cool air conditioning for adult, but our body get too cold than we thought when we have been under aggressive air conditioning for a long time. So I think it’s needed to get your body warm up with the miso chowder so we don’t catch a cold!
This white miso cream soup is very easy and delicious chowder on Japanese version. It’s required 7 ingredients and 20 minutes to ready! Let’s go through the recipe briefly.
Start with chopping vegetable and stir in a pan with olive oil and smoked salmon. Then add flour for thickness. Pour milk and Japanese soup stock, dashi powder. Finish with dissolve white miso. I went onions, carrots and smoked salmon. But you can have other variations like potatos, leek and chicken. The most important flavor magic happened with Japanese dashi powder, soup stock. If you don’t have it in your shelf, please obtain it at Asian glossary stores or via online!
This can cover a wide range of Japanese food and can last few years as long as it keeps cool and dry. Traditionally basic Japanese soup stock make from bonito flakes and sea kelp. Chefs and cooking experts definitely do that way but majority of Japanese people use this dashi powder. So we can make miso soup and other Japanese food more easily. Gluten Free Creamy Miso Chowder Soup
Ingredients
- 3 cup (750ml) dairy milk
- 2 tbsp corn starch
- 2 tbsp olive oil
- 2 tbsp white miso paste more to taste
- 2 tsp Japanese soup stock, dashi powder
- 100 g smoked salmon slices
- 1 onion diced
- 1 carrot diced, optional
- 100 mushroom sliced, optional
Instructions
- Heat the olive oil in a large saucepan. Add the salmon and vegetable, and stir for 5 minutes over medium heat.
- Reduce heat to low and whisk in the corn starch until well combined.
- Pour the 100ml of the milk and whisk until smooth over low heat. Gradually add the remaining milk as stirring.
- Add the Japanese soup stock, dashi powder. Then bring to a simmer and cook for 15 minutes, stirring occasionally.
- Place the miso in a small bowl and add a ladle of the soup, and whisk until completely dissolved. Fold the miso soup into the milk soup in a large saucepan.
- Simmer another 2-3 minutes. Taste, and add more miso if necessary. Optionally sprinkle servings with parsley or pepper.
The rainy season has started in Tokyo. It’s humid every day and the damp wether getting to me. In that wether, I think it’s time to refresh with chilled ramen noodles! I recently bought a tahini paste at a import grocery store, which i’ve been curious about for a while! When I tasted it, it reminded me Japanese classic sesame sauce! And thus, I made easy dipping sauce for chilled ramen noodles based on the tahini paste.
I made vegan tofu chocolate frosting on my son’s 1st birthday. I wanted to make something decoration cup cakes, but unfortunately working mother doesn’t have time on weekdays. So I made the tofu chocolate frosting on top of cookies with chocolate sprinkles instead.
As coming to summer, you want to have some spicy hot foods, don’t you? Last weekend I cooked Japanese summer curry. It’s made with the box of the Japanese curry sauce mix. There are various named Japanese curry box like S&B and House foods, but everything works the same.
It’s really delicious and easy to make. If you are not in the mood to cook dinner and you have some meat and onions left in your fridge, the curry box helps your cooking much easier! Except simmer time, work time is about 10 minutes. It’s done with only add water and the Japanese curry mix to the stir-fry meat and vegetable. No fail recipe even if you make the Japanese curry for the first time. Once you eat the curry, you will love its thick spicy curry as majority of Japanese people do so.
One box can be served for 8 people. And today I will share the recipe for 4 people, so enjoy your arrangement of ingredient for half of it.

Japanese Summer Curry

- 1/2 box Japanese curry sauce mix
- 250 g beef mince
- 2 onions
- 1 red pepper
- 1 eggplant
- 100 g asparagus
- 4 tbsp sliced almonds
Instructions
- Cut onions into small pieces and other vegetables into bite size.
- Place the beef mince and the onions in a large pot. Keep stirring until golden brown.
- Add 2 1/2 cups, approximately 600 ml, water to the pot. After it boils, skim the foam from the surface. Turn the heat down to low to simmer for 15 minutes.
- While simmering the pot, grill the pepper, eggplant and Asparagus until tender.
- Turn the heat off, and add the half of the box of the Japanese curry roux to the pot. Keep mixing until the curry sauce is smooth, then simmer for 15 minutes with low heat.
- Roast almond on the way you do.
- Serve the curry with Japanese rice on the side. Garnish with the grilled vegetable and the roasted almond.

Today i’m going to share the simple frozen matcha green tea yogurt bark recipe that I made last weekday. It’s required 5 minutes to prepare very easy recipe. You don’t need to dissolve matcha green tea powder!
Simply mix them all ingredients, then put it in the freezer. My favorite combination Matcha green tea and sweetened condensed milk which I did on Tiramis recipe, is good as always. White chocolate is crispy and delicious. Raspberry is also fresh accent. Because it’s used in whipped cream, taste is more airy and creamy than only yogurt used.

Frozen Matcha green tea Yogurt Bark

- 1 cup(250ml) heavy whipping cream
- 500 g Greek yogurt
- 4 tbsp(80g) sweetened condensed milk
- 1 tbsp matcha green tea powder
- 1/2 cup white chocolate chips
- 1/2 cup chopped fresh/frozen raspberries You can swap in your favorite berry
Instructions
- Place the whipping cream and the matcha greet tea powder in a large bowl. Whip with a electric mixer until firm peaks.
- Fold the rest of the ingredients into the whipped cream and combined well.
- Place into a square container and freeze until firm.
- Cut into pieces and serve.
I made Vegan Matcha (green tea) and Tofu Smoothie! It’s thick, creamy and very nutritious.
I am not vegan, by the way. But I know the truth that when I eat vegan meal my body gets so refreshed. Because my mother is a chef at a maternity clinic where only serve vegan meals for women after giving birth. I was hospitalized there at the time of my first birth of my daughter. I ate Vegan meals for a week and I felt somehow cleaned up my body. So every time when my mother come to my house, she makes delicious vegan dishes. Among her recipes, tofu dessert is particularly delicious. This recipe, Vegan Matcha (green tea) and Tofu smoothie inspired by one of her dessert. Its matcha green tea smoothie goes really well with blackstrap molasses.
A black syrup, called Kuromitsu, tastes just like blackstrap molasses is very common to use with Matcha green tea dessert in Japan. I recommended to drink as a breakfast. Tofu are natural protein and Molasses has also benefits of relief from PMS, stress and skin trouble.

Vegan Matcha green tea Tofu Smoothie

- 1 frozen banana, peeled, sliced.
- 1/2 cup(125ml) unsweetened almond milk
- 1/2 tbsp Matcha green tea powder
- 150 g silken tofu
- 1 tbsp lemon juice
- 2 tbsp cane sugar
- a dllop of blackstrap molasses recommended mild flavor
Instructions
- Place all ingredients without blackstrap molasses in a blender and blend until smooth.
- Top with blackstrap molasses.
I made dumpling snakes which tastes like pizza and shaped like hard candy! That’s I’ve been wanted to make for a long time! Only three ingredients you need, cheese, tomato sauce and dumpling skin. Dumpling skin may not be found easily depending on the where you live, but it should be sold at Chinese or Japanese grocery stores.
Dumpling skin is not only use for wrapping meat and vegetable, it is really useful because it can wrap anything! Enjoy various arrangements on your way.
About the recipe, start with cutting your favorite cheese into dices, put on a scoop of tomato sauce on the dumpling skin and wrap them together. Then Just bake the dumplings in the oven for 10 minutes. Water use as a glue to stick together a sheet of the dumpling skin. You can enjoy crispy on the edge and juicy melted cheese with tomato sauce inside! It would be nice to party snakes because it doesn’t stick to your fingers!
Easy Hard Candy Shaped Dumplings

- 30 sheets dumpling skin
- 120 g your favorite cheese I used Mozzarella.
- 1 cup(250ml) tomato sauce
Instructions
- Preheat the oven to 200oC (392oF).
- Cut the cheese into 1cm squares.
- Put 1 tsp of the tomato sauce and the daced cheese on the dumpling skin.
- Put water in hands with empty space of the dumpling skin. And fold both ends.
- Turn over the dumplings and pinch the edge one by one.
- Bake the dumplings for 10 minutes until golden brown around the edges.

It is a hot day with full of humidity! This is the summer of Japan. I remind it every year when summer is closer. I imagine that it would be very hard for the player of Tokyo Olympic Games in 2020 in such humid heat! During midsummer, it seems like walking in the water!(a bit exaggerating) But I look forward to the event! Anyway, now all I want to drink is soda! Let’s make super easy refreshing drink with Matcha green tea and Sprite!
I always drink Sprite onboard when I go abroad for a change. And Matcha green tea has the effect of lowering body temperature. About the taste, the combination of bitterness of Matcha and sweet soda of Sprite creates very new delicious taste! If you squeeze lemon, even more refresh it!

Sparkling Matcha Green Tea
Ingredients
- 1 tsp Matcha green tea powder
- 1 tbsp hot water
- 1 cup(250ml) Sprite
- 1 tbsp lemon juice and lemon wheel optional
Instructions
- Place the matcha green tea powder in a small bowl and add the hot water. Stir until the powder has completely dissolved.
- Pour the matcha green tea and Sprite in an ice-filled glass.
- Optional; Add the lemon juice and garnish with the lemon wheel.
