SWEET and CHUNKY HOMEMADE GRANOLA

What’s your favorite granola? My favorite granola is chunky, sweet and having roasting aroma. You can make this granola with 1 bowl, 7 ingredients and less than 5 minutes required until putting in the oven. It’s easy to make and so delicious! I love to eat it with yogurt in the morning, also I like to snack on when I want to eat something sweet. It lasts in an airtight container at room temperature for up to 2 weeks, so it’s always ready to eat on my kitchen counter.

Ingredients

200g old-fashioned rolled oats

30g sugar – any kinds of fine-grained sugar

50g nuts of your choice

50g olive oil or melted coconut oil

50g maple syrup or honey

50g small sized dried fruits of your choice

a pinch of salt

How to make sweet and chunky homemade granola

Firstly, before stirring all ingredients, prepare chopped nuts. I think that adding crushed nuts makes the granola more fragrant than adding whole nuts. The quickest way to make chopped nuts is to place the nuts in a food storage bag like a Ziplok and tap with a rolling pin until the nuts become small pieces.

Combine melted oil, sugar, maple syrup/honey and salt in a large bowl. I used olive oil in the photo. If you use coconut oil, use melted form. You can easily melt solid form coconut oil over a hot water-bath.

Once well mixed, add oats and the chopped nuts. Take time to combine well with a spoon. Crush any clumps so that it’s evenly mixed. If the coconut oil starts to solidify while mixing, warm the bottom of the bowl with a hot water bath.

Next, prepare for baking. You don’t need preheating the oven. Line a rimmed baking sheet with parchment paper (Not reusable parchment paper/mat). Pour the granola onto the pan and spread/flatten it.

Bake it on the bottom rack of the oven at 160°C (320°F) for 30 minutes until golden brown. After 15 minutes, open the oven and turn the pan around if one side is browning faster. Be careful not to burn. Baking time is approximate.

Once it become golden brown, remove from the oven, top with dried fruit and leave until completely cool. Then put in an airtight container while breaking granola. Store at room temperature and eat within 2 weeks.
