SWEET and CHUNKY HOMEMADE GRANOLA

Ingredients

  • 200 g old-fashioned rolled oats
  • 30 g sugar any kinds of fine-grained sugar
  • 50 g nuts of your choice
  • 50 g olive oil or melted coconut oil
  • 50 g maple syrup or honey
  • 50 g small sized dried fruits of your choice
  • a pinch of salt

Instructions

  • Prepare chopped nuts. The quickest way to make chopped nuts is to place the nuts in a food storage bag like a Ziplok and tap with a rolling pin until the nuts become small pieces.
  • Combine melted oil, sugar, maple syrup/honey and salt in a large bowl. Crush any clumps so that it's evenly mixed. If you use coconut oil, use melted form. You can easily melt solid form coconut oil over a hot water-bath.
  • Once well blended, add oats and the chopped nuts. Take time to combine well with a spoon. If the coconut oil starts to solidify while mixing, warm the bottom of the bowl with a hot water bath.
  • Line a rimmed baking sheet with parchment paper (Not reusable parchment paper/mat). Pour the granola onto the pan and spread/flatten it. You don't need preheating the oven.
  • Bake it on the bottom rack of the oven at 160°C (320°F) for 30 minutes until golden brown. After 15 minutes, open the oven and turn the pan around if one side is browning faster. Be careful not to burn. Baking time is approximate.
  • Once it become golden brown, remove from the oven, top with dried fruit and leave until completely cool. Then put in an airtight container while breaking granola. Store at room temperature and eat within 2 weeks.
