Here is my mother’s recipe of Japanese Ume plum syrup, which is really aromatic and delicious. You can enjoy the plum syrup with water or carbonated water, and also for shaved ice topping. It is usually made with rock sugar, but it can also be made with ordinary white granulated sugar. Also, even if you don’t have a glass jar, you can use food storage bags, such as a Ziploc, to make Ume plum syrup.
Ingredients
- 500g of Japanese plum (preferably green but you can also use yellow one.)
- 500g of white granulated sugar
- 2L glass jar or a large Ziploc bag
As you can see, this recipe is just adding the same amount of plums and sugar, so adjust the amount as you like.
Instructions
STEP 1: Gently rinse the plums. You don’t need to dry the plums after rinsing.
STEP 2: Remove the stems of the plums with a toothpick.
STEP 3: Put the plums in a freezable storage container or bags. Then put it in the freezer overnight.
STEP 4: Put the frozen plums in a clean glass jar or a Ziploc bag. Then add the sugar.
STEP 5: Store it in the refrigerator. Shake the jar occasionally, so that the sugar to be dissolved. If you use Ziploc, gently rub over the bottom of the bag.
STEP 6: About a month later, when all the sugar dissolved, it’s time to enjoy the plum syrup.
When the plums become wrinkled, it means that the plum extract has come out, so remove the plums. The raw plum is edible, but it have very slight poison, so not to eat a lot. If your glass jar taking up a lot of space in the fridge, put the plum syrup into a smaller container.

I hope you enjoy the Ume plum syrup same way. Even if you don’t have time to make plum syrup after buying them, frozen plums will last for about 3 months, so make it at any time you like.
